Talk about guilty pleasures, I have a thing for chocolate... I like them and then dislike them. When it comes to brownies, it has to be perfect. I got the inspiration from Epicurious Mini Brownie Cupcakes, but like mama says, "add a little more oomph to the recipe" ... and that, my dearest is exactly what I did.
I added some pure instant coffee to intensify the chocolatey flavor.
8 ounces on unsalted butter
2 cups of granulated sugar
1 1/4 cups of cocoa powder (unsweetened)
4 ounces of unsweetened chocolate (chopped for easy melting)
1/2 teaspoon of salt
1/2 teaspoon of vanilla extract
1/2 teaspoon of pure instant coffee or espresso powder
3/4 cups of flour
Preheat oven to 350°F and spray the mini muffin tin with cooking spray.
Melt butter in a lagre bowl, when it's completely melted, add sugar, chopped unsweetened chocolate, cocoa powder and instant coffee or espresso powder and stir till everything is mixed together.
Add salt, vanilla extract and eggs and mix till the mixture is all blended in, then add the flour and stirr till completely blended.
Scoop the batter into the mini tins and bake for 20 mins exactly, or until your tester comes out with some paste textured batter and brownie crumbs.
Let cool for a few minutes and enjoy!
